A food truck by the name of "Fat Dan's" has to be good


BY JAVIER VILLALBA - If Fat Dan’s Texas could be described in one word, the word would be “flavorful.”


With their unique dishes, tasteful creations and New Mexico flavors, this food trailer packs a big punch in El Paso. Fat Dan’s Texas Food Trailer, located at 11705 Montwood Drive, was founded in January 2021, by Dan Gerard and Lisa Golden.


They are really great people. Not only do they give amazing service and cook top-tier food, they take their own time to speak with their customers and create bonds with them, which not a lot of food trailer owners do.


They are very family oriented and serve the public to spread love and positivity amongst their customers.


Double El Rio Burger

I had the chance to taste three different dishes when I visited.

The first of the three was their “Double El Rio Burger.” What makes this burger so amazing is that every single unique ingredient can be tasted, allowing for a burst of flavors to fill one’s palate.


All their burgers contain quarter-pound patties, which are made fresh daily as well as lettuce, tomato, onions, and pickles, which are also sliced and diced every day.


What makes this burger stand out from all the others is the New Mexico Green Chile Cheese that is topped on the burger before they place the bun on top. It was my first time tasting the “Double El Rio” and it sure will not be my last.

The second item that I was able to try was what they call their “Bacon Wrapped Carne Asada Hotdog.”

It is exactly what you picture it to be and taste. The sausage that they use is extremely juicy and the crispy bacon that it is wrapped in adds even more to the flavor.


The meat used for the Carne Asada packs intense flavors and is cooked to a perfect state where it is not dry. If you think that is all this dish contains, you are in for a surprise because that is not at all where it stops. It is then layered on top with some homemade Chile Con Queso and you guessed it, Green Chile.


Of all three that I had the chance to try, this one specifically was my favorite because of the different flavors that you get in every bite. Besides how often do you get to try a ”Bacon Wrapped Carne Asada Hotdog”?

The third menu item that I tried was their best-selling, and Dan’s most favorite dish to prepare, the “New Mexico Green Chile Philly Cheesesteak.”

The hearty shaved ribeye steak compliments so well with the provolone cheese and the Green Chile adds even more flavor to the sauteed onions and mushrooms.


The best part about this dish is the bread, made in Philadelphia and shipped to El Paso for Fat Dan’s best tasting dish.


Fat Dan’s Texas serves a “Burger of the Week” every week and it is his way of experimenting with different foods.


He loves being able to create new things for himself and his customers to try. A few weeks back, he served a “Macaroni and Cheeseburger,” which caught the attention of and was loved by many.

If you ever get a chance to make it out there and taste their amazing food, Dan and Lisa will tell you all about how much they love serving El Paso and how serving food has been a beloved thing though many generations in his family, dating all the way back to 1906.


“Getting to carry on the tradition in the family business and being able to serve El Paso and Juarez has been one of the best parts of my life,” said Dan Gerard. “I am thankful for the El Paso community. Watching people eat your food is the best feeling. It’s my absolute favorite thing.”


So if anyone is looking for a flavorful place to eat with top-tier customer service that does things the right way, Fat Dan’s Food Trailer is the place to go.


The food is so good, I give it 5 out of 5 stars. I think you will too.
